There are many 16 and 17 year olds traveling alone with Interrail.
Note: some hostels and hotels do not accept minors traveling alone. Either one of your traveling friends is already 18 years or older, or you clarify it in advance with the hostel/hotel.

Yes. These are the so-called "inbound" and "outbound" days. They count as travel days on your Interrail Pass and allow you to travel from your place of residence to a country border or airport. Normally, travel in your country of residence is not included in the Interrail ticket. However, it can often be cheaper to buy a saver fare ticket and travel to the border or your first Interrail destination and save a day of travel on your ticket.
